Start in the beginning and stop once the pacing becomes glacial. It's not that great of a show really, but it can be kind of fun with interesting fantasy settings and characters and there's lots of episodes. I lost interest eventually but still read the manga because it takes less time and honestly the show is not worth the time spent to watch it anymore.

Be careful about not watching the inbetween episodes as the Foxy arc is in there as filler and it's regarded as the lowest point in the series by everyone who reads One Piece.
Water 7 has the most interesting characterization, buildup, and pay off of any arc in one piece and all the fights are well set up and conclude well. It's about good enough to be a manga by itself, "what if One piece took itself slightly more serious."
There are some filler arcs like G-8 I like personally which is right after Skypiea, but if you don't like Water 7 and the arcs that follow swiftly after then you won't like most of the other arcs.
Arlong arc early on was exciting, but Water 7 has all the elements Arlong arc had and leads into some of the best parts of the series.
Once the manga is finished I think people will still look back on this arc fondly simply because the later arcs have gotten so much more complex and dense. Water 7 balanced those elements with much more elegance.

I've watched it up to the time skip (episode 516) and had no problems, it was great all the way through so far. I heard people say it has bad animation and pacing but it was a far better produced show than Naruto or Bleach imo. If you are a NEET and want a really long adventure series to binge give it a try, it's great fun.

One Piece keeps the bar pretty low and it is pretty common for the plot to be them just messing around getting into random trouble so it doesn't feel as bad as when other shows do it. That said some times it is kind of shit like anything to do with Foxxy. Show just grinds to a halt whenever he shows up.

I would not really recommend watching Toei's animation past the New world (timeskip) The animes music is great though. I'd recommend reading the manga for it's for the wonderful chapter pages and the SBS corner (Q&A) aswell as author notes. you can read the fan coloured One Piece - Digital Coloured Comics I think they do the colours really well and it makes it easier to follow the action instead of black and white.
My problem with One Piece is sometimes it takes too long for arcs (mostly the fights) to finish when I enjoy the silly stuff the straw hats get up too most.
G-8 is an incredible filler arc. One Piece: Baron Omatsuri and the Secret Island is my favourite One Piece movie.
But it is a really fun series and the island hoping adventures filled me with excitement. Well this was mostly just rambling.

I have so much nostalgia for that 90s anime aesthetic like in the OP image. I remember watching One Piece when I was a teenager and feeling frisson during the fight scenes. I'm pretty sure I stopped watching it after the Enies Lobby Arc, because I thought it was getting too childish and cringy, to be honest. I'd recommend stopping at around that point.
